On uni......

Sea urchins are small, ball like animals which inhabit all oceans. Their shells are round and spiny, typically 1-4 inches across and come in many colors including black, dull shades of green, olive, brown, and purple. They move slowly and feed mostly on algae.  In Japan sea urchin is known as uni, and its roe ( or testes) can be priced up $225 a pound, served raw as sashimi with soy sauce and wasabi. It is found in cuisines all over the mediterranean usually raw with some lemon on the side. Other applications include flavoring egg dishes, fish soup, mayo, béchamel sauce,  and hollandaise. It is enjoyed in countries all over the world as a delicacy and for the most part consumed raw.
