About me...

This blog has been on my mind for quite some time now but I never really got around to it until now. I've started some food blogs before, three to be exact, however I've never followed through with them. Somewhere along the line I seem to forget the purpose of why i started them  or to be honest with you I just get lazy and stop writting entries . This is attempt number three and as they say “third times a charm”.
     A little bit about me: my name is Ricardo; I'm 31 years old and currently living in Chicago, IL. I'm originally from Nicaragua and was raised in the great city of Miami. I  moved to Chicago in March 2016,  looking for a challenge. Prior to this i spent some time in New York, San Diego, Hawaii  honing my skills and working for high end hotels and restaurants.  I've been the chef de cuisine  for Travelle restaurant at the langham hotel for a little over a year now. 
      Food is one of the few things that I can truly say I'm passionate about and I’ve been cooking professionally for 13 years. I don't have any fancy stories about how I got into this career. I didn't grow up cooking along side my grandmother nor were either of my parent’s foodies. In fact the kitchen was the last place you would find me when I was a kid. I couldn't stand the site of raw chicken; it would make me squeamish. I became interested in cooking during high school where I took 3 years of culinary classes; yet even then the only reason why I took the classes was for the large number of girls enrolled in it. It was during those three years that I developed a passion for cooking.
     After high school I earned a bachelors in culinary arts at Johnson and Wales University. I worked full time while attending JWU and I was lucky enough to work with two great chefs early on in my career; one of which I’m currently working with. I’m very grateful to both of them for providing me with a solid foundation on which I have built my career upon. They have also facilitated some great opportunities and opened many doors for me. Prior to where I’m working now I have spent time at the Hilton San Diego bayfront, ULU restaurant at the four seasons hulalalai,  Conrad hotel New York, the Four Seasons New York, Four Seasons Miami, Prelude restaurant (owned by Barton G.), Gansevoort South, , and the Biltmore Hotel in Miami. I have also staged  with some of the best chefs in the industry....Daniel Boulud , George Mendes, Harold Dieterle, Michell bernstein, Jean Georges, Anthony Sasso, Joseph Ogrodnek, Walker Stern, and Alex Stupak.
     The main purpose for writing this blog is to have an outlet where i can share my thoughts, ideas, work ,and photography, while giving readers a glimpse into my though process  and execution of Dishes.
