On Maitake......

    Maitake or hen of the woods as they are also called are a type of mushroom native to Japan known for their use in chinese medicine where it has proven itself effective as a cancer fighter. Not that i  eat these mushrooms for their medicinal value, but its an interesting fact. The Word "Maitake" is literally translated from japanese as "dancing mushroom", it took on this name because in ancient time people who came across Maitake could sell it for its weight in silver which in return would lead anyone into a dancing celebration.
    Maitakes are located way up top on my favorite mushrooms list. They are packed deep with flavor and texture. When raw they smell of yeast, soil, and wet grass. They are very complex in flavor combining notes of smoke, nuts, and minerals into every bite. I love to get a pan really hot and just sear the maitake   until they get crisp and dark brown. If seared properly it takes on a crunchy texture towards the top while staying tender at its base. For the most part they pair well with more heavier dishes like grilled or roasted meats, and risottos, although they are great fried and tossed in a salad. I love serving them  with grilled bread,chives and roasted garlic on top of fresh ricotta.
