Here's the special I made the last two nights. It was pan-seared octopus with roasted maitake mushrooms, garbanzo and charred tomato stew with harissa, cipollini onions, and arugula. For the stew, I browned garlic along side basil in a hot sauté pan. I threw in cherry tomatoes, cipollini onions, and garbanzo beans. Once the tomatoes started releasing their juices I added pepperoncini brining liquid, chicken stock, harissa, pepper flakes, and pomodoro. I finished the stew with scallions and butter. On plate up, I put the stew down first around the plate, placed my seared octopus on top, garnished with micro arugula, and drizzled some white balsamic vinaigrette over the dish.
