Gnocchi are italian dumplings made from potatoes, flour and sometimes egg. they are very simple to make.Here is a basic recipe i like to use when i make them.
Gnocchi
2 pounds potatoes( i like to use fingerling)
1 large egg
1T salt
1C All purpose flour
The potatoes are boiled, then peeled and passed through a potato ricer. The cooked potatoes are then cooled slightly and mixed with the flour and egg until a dough is formed. The dough is rolled into a log and cut into 1 inch pieces. The dumplings are then boiled for about 1 minute. When they float to the top, they're done.
The great thing about these italian dumplings is that you can make them ahead of time and pop them in the cooler for up to 48 hours. Another option is to put them on a tray and freeze them; making sure not to let them touch each other. Once the gnocchi are frozen transfer to a freezer bag and take them out when you need them.
I love gnocchi because they lend themselves to a variety of food pairings. They pair very well with just about anything. I like to sear my gnocchi once they come out of the water and then mix them with seasonal vegetables, herbs, and a salty cheese. I made these gnocchi the other night with charred summer onion,chives, roasted garlic, and ricotta salata.
